Salmon Orzo Salad

Ingredients
  

  • 2 lb Salmon We like to use wild salmon from Butcher Box
  • 1 lb Orzo The size of a small box
  • Cherry/Grape Tomatoes
  • 1 Cucumber, Chopped
  • 1 Red Onion, Chopped
  • Mixed Greens
  • Olive Oil
  • Balsamic Vinegar

Instructions
 

  • Grill or bake the salmon until the fish reaches an internal temperature of 145 degrees.
  • While the salmon is cooking, boil water and cook the Orzo according to the package
  • Chop the cucumber and onion
  • Once the salmon and orzo are cooked, layer the mixed greens with the orzo, and add cherry/grape tomatoes, cucumber, and onion to the salad. Drizzle with olive oil and balsamic vinegar as dressing and enjoy!
