Salmon Orzo Salad

Ingredients
- 2 lb Salmon We like to use wild salmon from Butcher Box
- 1 lb Orzo The size of a small box
- Cherry/Grape Tomatoes
- 1 Cucumber, Chopped
- 1 Red Onion, Chopped
- Mixed Greens
- Olive Oil
- Balsamic Vinegar
Instructions
- Grill or bake the salmon until the fish reaches an internal temperature of 145 degrees.
- While the salmon is cooking, boil water and cook the Orzo according to the package
- Chop the cucumber and onion
- Once the salmon and orzo are cooked, layer the mixed greens with the orzo, and add cherry/grape tomatoes, cucumber, and onion to the salad. Drizzle with olive oil and balsamic vinegar as dressing and enjoy!
