Creamy Tuscan Chicken Bowls

Ingredients
- 1 package bacon
- 3 lbs chicken breast
- 6 tsp minced garlic
- 5 roma tomatoes, diced
- 2 cups heavy cream
- 1 bag baby spinach
- 1 ½ cups parmesan cheese
- 1 onion, diced
- 6 tbsp fresh basil, chopped
- something to use as the base of your bowl We used mixed frozen veggies and cooked according to the package to keep it low carb. You could also use pasta if you'd prefer!
- 2 tbsp olive oil
Instructions
- Preheat the oven to 350 and bake chicken until it reaches an internal temperature of 165 (approximately 25-30 minutes)
- Once the chicken is cooked, set aside and cut the chicken up once cooled. Then preheat the oven to 400. On a lined baking sheet cook the bacon for 20 minutes or until crispy.
- Put olive oil in a skillet on medium heat. Once warmed, add onion to the pan and allow to cook down- about 5 minutes. Once the onion is soft, add garlic and cook for an additional minute until fragrant. Then add in the diced tomatoes and whipping cream. Once it comes to a simmer, add in the spinach until wilted. Stir continuously while the sauce is cooking together. Once all spinach has been added, stir in the parmesan cheese.
- Cook the base of your bowl according to the package. (Steam veggies, cook pasta etc.)
- Assemble your bowl! Put your base in the bottom of the bowl, add in 1/2lb of chicken, 1/4 cup of the sauce and crumble one piece of the bacon on top. Season with salt and pepper to taste and enjoy!
