Lefton Family BBQ Beef Brisket
Ingredients
- 4-5 lb Beef Brisket
- 1 bag Red Potatoes
- 1 Onion, diced
- 1 bag Baby Carrots
- 1 bottle Montgomery Inn BBQ Sauce (the large bottle) I've only ever made it with Montgomery Inn (but that's the Cincinnati Girl in me). If you have a favorite BBQ sauce feel free to try it with that instead!
- Salt + Pepper
Instructions
- Preheat the oven to 325 degrees F
- Season both sides of the brisket with salt and pepper and place in a roasting pan.
- Dice the onion and quarter the red potatoes. Put the cut-up onions and potatoes as well as the carrots over top of the brisket.
- Pour the bottle of BBQ sauce over everything. Then refill the empty bottle with water and add that to the pan as well. **The liquid should cover everything in the pan. If not, add more sauce**
- Cover pan with aluminum foil and bake. Cooking time will vary but estimate 45-55 minutes of baking per lb of meat.
- Meat is done when internal temperature reaches 165 degrees F and is tender enough for you to stab with a fork. Allow the meat to cool and slice it thin and on the grain. Enjoy!

This is a great recipe for a big gathering that is sure to impress your guests, and also a great option for meal prepping. I like to freeze this into small containers and take it out as emergency meals as needed.
