Preheat the oven to 325 degrees F
Season both sides of the brisket with salt and pepper and place in a roasting pan.
Dice the onion and quarter the red potatoes. Put the cut-up onions and potatoes as well as the carrots over top of the brisket.
Pour the bottle of BBQ sauce over everything. Then refill the empty bottle with water and add that to the pan as well. **The liquid should cover everything in the pan. If not, add more sauce**
Cover pan with aluminum foil and bake. Cooking time will vary but estimate 45-55 minutes of baking per lb of meat.
Meat is done when internal temperature reaches 165 degrees F and is tender enough for you to stab with a fork. Allow the meat to cool and slice it thin and on the grain. Enjoy!
