This creamy one pot sausage orzo recipe is not only SUPER easy to make but it’s also delicious and good for a well balanced diet.

One Pot Creamy Sausage Orzo

Cook Time 20 minutes

Ingredients
  

  • 2 tbsp Butter Choose grass-fed when possible. We like Kerrygold
  • 2 lbs Italian Sausage
  • 2 cloves Minced Garlic
  • 1 Red Pepper, chopped
  • 1 can Fire Roasted Diced Tomatoes (14.5oz)
  • 1/4 cup Pesto
  • 2 cups Chicken Broth
  • 1/4 cup Heavy Cream
  • 16 oz Baby Spinach
  • 1 cup Orzo
  • 1/2 cup Shredded Parmesan Cheese

Instructions
 

  • In a large pot, melt butter over medium heat. Once melted, add the ground sausage and cook. Once sausage is browned add in the red pepper and garlic and saute for for 2-3 minutes.
  • Add in the fire roasted tomatoes pesto, chicken broth, and heavy cream. Bring to a boil and then add in the spinach and orzo.
  • Stir together and bring heat down to medium low and cook for 10 minutes with the lid on while stirring occasionally. When orzo is tender, remove the lid and simmer for a few additional minutes as the sauce thickens
  • Stir in the parmesan cheese and enjoy!
