Combine olive oil, lemon juice, garlic, oregano, thyme, paprika, 1 tsp of salt and ½ tsp of pepper to make the marinade. (It will be thick). Once mixed together, coat the chicken breast evenly with the marinade and let sit for at least 30 minutes. (can stay in fridge for up to 2 days).
While marinating, you can make the tzatziki sauce by combining the greek yogurt, cucumber, dill, lemon juice and garlic. Season with salt and pepper to taste. Once well combined, return to the refrigerator to chill.
Preheat the oven to 425.
Once oven is ready, you can bake the chicken for 20-25 minutes until it reaches an internal temperature of 165.
Allow the chicken to cool, and cut into slices so that it is easy to serve (and store if you plan to meal prep!)
Serve your sliced chicken on pita (we prefer whole wheat) with tzatziki sauce and top with diced tomatoes, red onions, and shredded lettuce.
